Because you get to enjoy a steaming bowl of noodles, tender beef, and a broth that is packed with flavor. It's also really easy to make — so great if you want a filling, healthy midweek dinner," Dalton raves. What's not to love about that?

Gather the ingredients for this spicy beef and noodles soup

As with any other recipe, the first step is gathering all the necessary ingredients. In this case, you will need beef steaks, vegetable oil, beef broth, light soy sauce, cornstarch, garlic cloves, fresh ginger, Chinese five spice, red chili, green onions, egg noodles, star anise, fresh cilantro, and Chinese chili paste.

Once you have those things, you can whip up this spicy beef and noodles soup.

Add cornstarch and soy to the beef strips

Grab your beef strips and place them in a bowl. Then, you can add the cornstarch and a tablespoon of soy sauce to the strips. Mix well and let it sit for about 10 to 15 minutes. The purpose is to velvet the beef. "The cornstarch helps the beef strips become tender before stir-frying. You want to slice the beef as thinly as possible," Dalton adds.

Add the spices to a pot to make the broth

For this step, you will need a large pot. Place it on your stove and begin adding the majority of the ingredients. This includes the beef broth, soy sauce, star anise, garlic, ginger, five spice, half the green onions, and half the chili. Turn the heat down to low for 15 minutes, allowing the flavors of the spices to infuse.

"The special ingredient here is the star anise. Its sweet aniseed flavor imparts aromatics to the broth that marries incredibly well with the beef and the Chinese five spice," Dalton shares.

Cook the beef strips

Once ready to serve, grab a skillet and drizzle in some oil. Turn on the heat to warm the oil and add the beef strips to the skillet. Stir fry the meat for about 2 minutes, until the beef turns brown. Since the beef is so thin, it doesn't take very long to cook through.

Then, put the beef to one side.

Assemble the bowls

Now that everything is finished cooking, take out your serving bowls and divide the noodles between them. Next, add the beef strips, cilantro, the remaining green onions, and chili. "If you don't want it too spicy — remove the seeds from the chili and use less sparingly and also leave the chili paste. If you like it fiery hot, just add more paste and more fresh chili," Dalton shares.

Last but not least, ladle the beef broth into bowls and drizzle the chili paste over your soup.

Serve and enjoy

Once you add the broth to the bowls, you can serve them to your lucky guests. This dish is the ultimate meal since it includes noodles and beef, which will keep you warm and full. There's really nothing else you need to serve it with unless you want to add a little something on the side.

  • 2 beef steaks, thinly sliced

  • 5 cups beef broth
  • 3 tablespoons light soy sauce, divided
  • 1 tablespoon cornstarch

  • 6 ounces egg noodles, cooked according to packet instructions

  • 1 teaspoon Chinese chili paste
Directions
  1. Add the cornstarch and 1 tablespoon of soy to the beef strips. Mix well and leave for 10 to 15 minutes. This is to velvet the beef so it is tender rather than chewy.
  2. In a large pot, add the beef broth, soy sauce, star anise, garlic, ginger, five spice, half the green onions, and half the chili, then simmer on low heat for 15 minutes or more to let the flavors infuse.
  3. When you're ready to serve. Heat the oil in a skillet. Add the beef strips and stir fry for 2 minutes until the beef is brown. Put to one side.
  4. Divide the noodles into bowls. Then add the beef strips, the cilantro, the rest of the green onions and chili.
  5. Ladle the beef broth into the bowls.
  6. Drizzle chili paste on top and serve immediately.
