Gather the ingredients for scallop casserole
For this recipe, you'll need a sleeve of butter crackers, chopped parsley, the zest from one lemon, unsalted butter, scallops, white wine, minced garlic, a minced shallot, and salt and pepper to taste.
Melt the butter and crush the crackers
Upon entering the kitchen, preheat the oven to 450 F. Crush the crackers in a plastic bag or food processor. Leave some good-sized chunks in there. In the meantime, melt your butter. Then, using a small bowl, combine the cracker crumbs with the chopped parsley, lemon zest, and 4 tablespoons of butter.

- 6 tablespoons unsalted butter, melted, divided
- 1 pound scallops
- ¼ cup white wine
- 2 cloves garlic, minced
- 1 shallot, minced
- salt, to taste
