TikTok Custard Toast Recipe

As often happens on social media, certain ideas take hold, and one food-related trend to hit TikTok is custard toast. Some people refer to it as "yogurt toast," which sounds fairly healthy, even if some people have likened its taste and mouthfeel more to cheesecake. Others call it "custard toast," which brings to mind something decadent, yet casual — something sweet, but not too sweet. 

As you've probably guessed, recipe developer Stephanie Rapone, who brought us this recipe for a version of TikTok custard toast, is a member of #TeamCustard. And now that we've experienced the recipe for ourselves, it really does seem appropriate. Yogurt certainly plays a role in this recipe, but ultimately, it's a smooth, creamy, sweet, and eggy custard that distinguishes the eating experience here. 

And, you don't need an air fryer to make this dish, contrary to what some TikTok videos might have you believe. Rapone uses an oven, which makes this recipe accessible to practically everyone.

Gather your ingredients for TikTok custard toast

Rapone's recipe for TikTok Custard Toast calls for 2 slices of brioche bread. Rapone recommends finding brioche that's sliced ¾-inch thick or getting a loaf and slicing it accordingly. For the custard filling, you'll need 1 large egg, ¾ cup vanilla yogurt, and ½ teaspoon vanilla bean paste. You'll be topping the custard toast with ½ cup raspberries. To serve your custard toast, you'll also need ¼ cup maple syrup and 2 teaspoons powdered sugar.

Whisk together the custard filling

Now that you have all the ingredients gathered, it's time to get to whisking together the ingredients that make up the custard. Some recipes for custard toast use a big splash of maple syrup to sweeten the filling, but Rapone's version requires just the egg, yogurt, and vanilla paste, leaving the maple syrup for use as a sweet flourish upon serving. Whisk these three ingredients together to combine. In addition, you'll also want to set your oven to preheat to 350 F. 

Prep the bread "pastry shells"

For this step, you're going to need a clean, flat-bottom measuring cup or another, similarly-shaped item that's flat on the bottom, and about 3-inches in diameter. Place the bread slices on a baking sheet, then use the cup or other object to press down on the bread. This is going to make a slight indentation, or a "well" into which you will pour the yogurt custard mixture. This is also the reason why having the thickly sliced bread is so important — it allows for a deeper well.

Bake and serve the custard toast

All that's left to do now is to sprinkle half the berries into the uncooked custard. Pop the baking sheet into your preheated oven for 15-20 minutes — Rapone notes that the yogurt custard mixture should be slightly jiggly in the middle without running out of the toast when you tip the pan slightly. When your custard toast is done baking, take it out of the oven to cool for a few minutes. Then, top with confectioner's sugar, drizzle with maple syrup, and add the remaining fresh raspberries.

  2. Add the vanilla yogurt, egg, and vanilla paste to a bowl and whisk until combined.
  3. Place the bread slices on a baking sheet. Use a flat-bottom 1-cup measuring cup to press down the center of the bread to create a well.
  4. Fill the well with the yogurt mixture.
  5. Sprinkle half the berries into the yogurt mixture. Bake for 15-20 minutes, until the yogurt custard mixture is set, meaning it's slightly jiggly in the middle, but doesn't run out of the well when you tip the pan.
  6. Cool for 3-5 minutes. Top with confectioner's sugar, drizzle with maple syrup, and add the remaining fresh raspberries.
