Microwave the sweet potatoes

Mix the toppings together, and then slice open the potatoes

As your sweet potatoes cool down, you can turn your attention to the toppings. Grab a small bowl, and add in the beans, corn, red onion, olive oil, apple cider vinegar, salt, and pepper. Give all of these ingredients a thorough stir, ensuring that they're all evenly coated with the oil, vinegar, and seasoning. Now, set this aside for a minute, and return to the sweet potatoes. 

Put the sweet potatoes on a plate, and carefully slice them open — though they've cooled down on the outside, they'll still be very hot on the inside. Mash each piece gently with a fork to get them ready for the toppings.

Ingredients
  • 2 sweet potatoes
  • ½ cup cooked black beans
  • ½ cup cooked corn

Directions
  1. Prick the sweet potatoes several times with the fork tines.
