Air Fryer Corn Fritters Recipe

For this particular dish, recipe developer Susan Olayinka opted to keep it a little bit lighter, using an air fryer instead. We think it's pretty genius, too. Olayinka's recipe yields seven servings, which is perfect for a crowd, so consider preparing it for your next party!
This recipe is great, because it requires just a handful of ingredients, and there are quite a few that you may already have at home. Gather the ingredients to prepare air fryer corn fritters
To start things off, make a list of all the items needed to whip together this yummy dish. You will need some sweet corn, all-purpose flour, and a few eggs. In addition, grab some shredded Parmesan cheese, parsley, and chives.
You will also need a little bit of salt, and hopefully you already have it at home, because pretty much every recipe calls for salt. Last but not least, you will need paprika and an olive oil spray bottle. There is also one optional ingredient in this recipe, and that is onion and chive dip. Once you have gathered all of the items, it's time to begin.
Blend the ingredients
For this step, you will need to take out a blender to do some mixing. Once the blender is ready to go, add in the sweet corn, the all-purpose flour, eggs, and shredded Parmesan cheese. Turn the speed to high, and blend the mixture for about 10 seconds. That's all it takes to break down the solid ingredients. Now the mix should look more like a batter than loose ingredients.
In the meantime, grab a chopping board, and chop the parsley and chives so they'll be ready to fold into the batter. Then, set them aside for later use.
Pour the mixture into a bowl
Grab a mixing bowl to combine your ingredients. Then, take the mixture from the blender, and pour it into the mixing bowl. Next, add ¾ cup of sweet corn, followed by the salt, paprika, chopped chives, and chopped parsley. Using a spoon, mix the ingredients together until they are well incorporated.
Now things are really coming along, and the good news is that the rest of the process is super simple! Once you finish this part, set the mixture to the side, because you will need it again in just a second.
Prep the air fryer
Now that your batter is ready, it's time to prep the air fryer. Take out the air fryer basket, and line it with parchment paper first followed by olive oil. This will ensure that the corn fritters won't stick to the bottom of the air fryer tray and they break apart when you take them out.
There should be enough room to put three sweet corn fritters onto the tray during each cooking cycle. Then, spray more olive oil on top of the sweet corn fritters. This extra step will help the top of the fritters achieve a nice, golden brown color.
Cook the corn fritters
Once you have the corn fritters placed into the air fryer, set your timer for 12 minutes. About halfway through (at six minutes), flip the corn fritters so that both sides get nice and brown. The batter will make seven corn fritters, which is plenty for you and a few friends.
Depending on the size of your air fryer, it may take about three batches to finish all of the fritters. Simply repeat the same steps until you finish.
Serve the corn fritters
Once you have finished cooking all of the corn fritters, it's time to take them out, and transfer them onto a serving platter. You can top these babies with onion and chive dip or fresh chives. Olayinka recommends serving these with "hummus, salsa, [or] paired with salad and a salad dressing." Olayinka recommends using blue cheese dressing with this.
Surprisingly, leftovers will keep. "You can keep leftovers, even though these are best fresh," Olayinka shares. "I would say they would last about two to three days in the fridge." Just pop them back into the air fryer to reheat!
- 1 1/2 cups sweet corn, divided
- 1 cup all-purpose flour
- 2 eggs
- ¼ cup shredded Parmesan cheese
- 2 tablespoons parsley
- 1 tablespoon chives
- ½ teaspoon salt
- ¼ teaspoon paprika

- Place 2/4 cup of sweet corn into a blender with the all-purpose flour, eggs, and shredded Parmesan cheese.
- Blend the mixture on high for 10 seconds.
- Get a chopping board, and chiffonade the parsley and chives, and set aside.
- Pour the mixture into a mixing bowl, then add 3/4 cup of sweet corn, followed by the salt, paprika, chopped chives, and chopped parsley.
- Mix everything together with a spoon until it's well incorporated.
- Get a lined air fryer tray, spray the olive oil spray on the parchment paper, and place 3 corn fritters onto the tray. Then, spray more olive oil on top of the corn fritters.
- Bake the corn fritters for 12 minutes, turning them over at 6 minutes.
- After they are done, transfer to a serving plate, and top with optional onion and chive dip and fresh chives.
