Probably because it's "by far one of our most popular" items according to Scheffler (via The National Provisioner). A food review though from YouTuber Daym Drops does seem to note that it's the patty melt's "grilled cheese" factor of the Texas toast combined with the beef patty and sauce's "spicy kick" that make it a standout.
