Super-Rich Chocolate Pudding Recipe
If you love pudding, but are looking for a new way to make it, then this super-rich chocolate pudding is perfect for you. This dish makes the perfect nightcap to dinner, but it would also be great served with lunch, or even as a snack. Chocolate chips make the pudding richer, and more decadent than your traditional pudding.
Recipe developer Eric Ngo of Frenchie the Toast came up with this quick and easy recipe that will take your pudding game to the next level. "It's super easy to make, and [is] delicious," Ngo raves. He also explains what makes the pudding so rich and tasty. "The extra bits of chocolate chips make it extra rich; if you want a lighter-tasting chocolate pudding, the cacao powder will suffice," Ngo shares. "The chocolate chips have cacao butter, thus making the chocolate pudding thicker."

Gather the ingredients for this super-rich chocolate pudding
To kick things off, you will need to head to the grocery store, and gather a handful of ingredients. Just pick up whole-fat milk, cacao powder, sugar, cornstarch, and dark chocolate or semi-sweet chocolate chips. You can also optionally top the finished pudding with cacao nibs, and sea salt.
Once you have those items, you can make this super-rich chocolate pudding.
Whisk the ingredients together
Grab a medium-sized saucepan, and toss in the sugar, cacao powder, and cornstarch. Please note that the heat should be off for this step. Use a whisk to mix the ingredients. If this recipe had a secret method, "It would be mixing the sugar, cornstarch, and cacao powder together first in order to minimize the risk of getting lumps," Ngo notes.
Next, add the cold milk, and stir until thoroughly mixed. "Make sure to add the milk cold, not hot, or else you will likely end up with a grainy pudding," Ngo notes.
Bring the mixture to a boil
Crank the heat up to medium-high, and wait for the mixture to come to a boil. While you wait for bubbles reach the surface, be sure to stir constantly. It should take about 4 to 5 minutes for the mixture to boil. Once the liquid comes to a boil, turn the heat to low, and stir for another minute. Then, add the chocolate chips, and continue stirring until the mixture gets nice and smooth.
Let the pudding chill, and serve
Remove the saucepan from the heat, and transfer the pudding mixture into another bowl. Cover it with plastic wrap to prevent a skin from forming over the top. Then, pop it in the fridge, and chill it until it gets cold. Once chilled, remove the super-rich pudding from the fridge, and dig in. If you choose to use the cacao nibs and sea salt, you can sprinkle them over the top.
Ngo also provides a few of his favorite serving suggestions, saying that this decadent treat pairs well with "whipped cream, or fresh red berries." This is also a great dish to make ahead of time, and if you have any left, Ngo notes that it will be good for "up to 4 days."
- 1 ½ tablespoons sugar
- 2 tablespoons unsweetened cacao powder
- 1 tablespoon cornstarch
- 1 cup whole fat milk
- 1 tablespoon dark chocolate or semi-sweet chocolate chips
- ¼ teaspoon cacao nibs
- Sprinkle of sea salt
- In a medium, unheated saucepan, whisk together the sugar, cacao powder, and cornstarch.
- Add the cold milk, and stir until fully mixed.
- Over medium heat, bring it to a boil while continuously stirring, about 4 to 5 minutes.
- Once boiling, lower the heat to low, and stir for another minute. Add the chocolate chips, and stir until smooth.
- Pour the pudding into a glass container, cover with plastic wrap, and chill in the refrigerator until cold, about 1 hour.
