What's The Difference Between White Corn And Yellow Corn?

The biggest difference between yellow corn and white corn is (obviously) the color, and in some ways, the taste — white corn produces sweet white kernels, while yellow corn kernels have a pale to dark yellow hue. The color difference is because of yellow corn's beta carotene, which turns into vitamin A during the digestive process.
Many believe that a corn’s sweetness depends on the season it is bought in, with the peak season providing the sweetest and juiciest corn, although it varies regionally. The sweetness is actually determined by the corn variety, and today, there are three sweet corn types that have varying levels of sweetness.
These include the normal-sugar, sugar-enhanced, and super-sweet — which has thrice the amount of sugar as the others. The sweet and delicate flavor of white corn makes it the preferred choice for tamales, while yellow corn is popular for grilling, steaming, making corn tortillas, cereals and cooking oil.
