Creamy Pesto Pasta Recipe

Ingredients
  • 7 ounces fusilli pasta
  • 1 teaspoon olive oil
  • 2 large cloves garlic, crushed
  • 8 ounces cooked chicken pieces
  • ⅔ cup heavy cream
  • ⅓ cup green pesto
  • 12 cherry tomatoes, halved
  • ¼ cup grated Parmesan cheese
Directions
  1. Boil and drain the pasta as per the package instructions.
  2. Meanwhile, heat the olive oil in a large frying pan and fry the garlic on a low-medium setting for about 2 minutes, stirring constantly.
  3. Add the chicken, turn the heat up a little, and fry for a few minutes to cook it through.
  4. Add the cream and pesto and stir well to combine.
  5. Add the cooked pasta, tomatoes, and Parmesan cheese, and stir. Cook for another 3 to 4 minutes.
  6. Serve the creamy pesto pasta optionally with fresh chopped basil and extra grated Parmesan cheese.
