Guinness Brownies Recipe

Ingredients
  • 10 tablespoons unsalted butter, divided
  • 2 cups granulated sugar
  • ¾ cup and 2 tablespoons Guinness Extra Stout beer, divided
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • ½ teaspoon salt
  • ⅔ cup semi-sweet chocolate chips
  • ¼ cup powdered sugar
Directions
  1. Preheat the oven to 350 F. Lightly grease a 9x9-inch baking pan with cooking spray, line with parchment paper, and set aside.
  2. Melt 8 tablespoons of the butter by microwaving it in a large microwave-safe bowl. Add the sugar, ¾ cup beer, vanilla extract, and eggs, and beat until well-mixed.
  3. In a separate bowl, whisk together the flour, cocoa powder, and salt. Gently mix the dry ingredients with the wet ingredients until the batter is smooth. Pour the batter into the prepared pan and spread it evenly.
  4. Bake for 35-38 minutes in the preheated oven, until the center of the brownies are set, and a toothpick inserted in the center comes out with a few crumbs. Allow the brownies to cool completely.
  5. In a medium-sized microwave-safe bowl, mix together the chocolate chips, remaining 2 tablespoons butter, and 2 tablespoons beer. Microwave in 30-second increments, stirring between each increment until the chocolate and butter have melted and the mixture is smooth.
  6. Add the powdered sugar to the chocolate mixture and whisk until the ganache is smooth.
  7. Pour the ganache on top of the brownies and spread it evenly. Top with sprinkles, if desired. Let the ganache set, then cut the brownies into squares and serve.
