Ingredients
  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon salt
  • 1 cup granulated sugar
  • ¾ cup butter, at room temperature
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ⅓ cups rolled oats
  • ⅔ cup raisins
Directions
  1. Preheat the oven to 350 F and line 2 baking sheets with parchment paper.
  2. Whisk together the flour, baking powder, baking soda, cinnamon, ginger, and salt in a mixing bowl.
  3. In another large mixing bowl, beat the butter and sugar until smooth and creamy.
  4. Add the egg and vanilla and beat to combine.
  5. Sieve in the flour mixture and stir everything together with the wooden spoon until combined.
  6. Mix through the oats and raisins.
  7. Roll the dough into balls and place them on the baking sheets.
  8. Bake the cookies for 12 to 14 minutes, or until golden on the top.
  9. Leave the cookies on the baking sheets for about 10 minutes before using a spatula to carefully transfer them to a wire rack to cool.
