Instant Pot Refried Beans Recipe

Ingredients
  • 1 teaspoon oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 2 cups dried pinto beans
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt, plus more to taste
  • 6 cups water
Directions
  1. Rinse the pinto beans.
  2. Select the "sauté" setting on the Instant Pot.
  3. Add the oil to the pot and let it heat up.
  4. Add the onion and garlic and cook them for 3 minutes, stirring frequently.
  5. Cancel the "sauté" setting and add the dried pinto beans, chili powder, cumin, salt, and water and stir to combine.
  6. Place the lid on the Instant Pot and make sure the nozzle on the top is set to "sealing."
  7. Select "pressure cook" and set the time to 40 minutes.
  8. The Instant Pot will take about 15 minutes to reach pressure before the cook-time begins.
  9. When the timer goes off, let the beans sit for 20 minutes.
  10. Change the nozzle on the lid to "venting." Stand back in case excess steam releases.
  11. Drain the beans over a large bowl to reserve the cooking water.
  12. Put the drained beans back in the Instant Pot along with 2 cups of the cooking water, discarding the rest.
  13. Blend the beans using an immersion blender, upright blender, or potato masher until they're creamy.
  14. Taste the beans and add salt if necessary.
  15. Serve the refried beans topped with salsa, avocado, red onion, fresh tomatoes, cilantro, or lettuce.
