Easy chicken tacos for when you don't feel like cooking

Ingredients
  • 10 corn tortillas
  • 1 tablespoon oil
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • 1 pound leftover rotisserie chicken, works best with breast meat but any will work
  • 1/2 teaspoon garlic powder or granules
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 chili powder
  • Salt to taste, roughly 1/2 teaspoon
Directions
  1. Heat the oil in a 10-inch cast iron frying pan.
  2. Toss the onion and pepper into the pan and a stir to coat, then let cook for 4 to 5 minutes.
  3. Blend all spices to create a taco seasoning, then roughly chop the cooked chicken.
  4. Once the onion and pepper are softening, add chicken to pan.
  5. Sprinkle the seasonings on the chicken and veggies, and stir to coat.
  6. Cook another 4 to 5 minutes until heated through, and taste and adjust with salt as needed.
  7. Serve the cooked meat and veggies with tortillas and the prepared taco fixings of your choosing.
