Ingredients
  • ½ cup unsalted butter, softened
  • ¾ cup sugar
  • 1 egg
  • 1 teaspoon pure vanilla extract
  • 2 cups flour
  • ¼ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
Directions
  1. Preheat your oven to 350 degrees.
  2. In the bowl of a stand mixer, fitted with the paddle attachment, cream the butter and sugar until well incorporated.
  3. Add in the egg and vanilla extract and mix well.
  4. In a separate bowl, mix together the flour, baking powder, baking soda, and salt.
  5. With the mixer running, gradually add the flour mixture into the butter mixture. Mix until a soft dough forms.
  6. Prepare a baking sheet with parchment paper or cooking spray to prevent cookies from sticking. Form dough into one-inch sized balls. Flatten slightly on the cookie sheet. Top with sprinkles or additional sugar if desired.
  7. Bake cookies for 16-18 minutes until the edges are just golden brown. Remove cookies from the oven and allow them to sit on the baking sheet for another 5 minutes.
  8. Remove cookies from cookie sheet and allow to finish cooling on a cooling rack or plate.
  9. Store cookies in an airtight container.
