  • 1 celery, chopped
  • 1 (3 ½ pounds) ham joint
  • 1 bay leaf
  • ½ tablespoon black peppercorns
  • 1 cinnamon stick
  • ½ gallon cola
  • 1 cup honey
  • 2 tablespoons wholegrain or Dijon mustard
  • 1 teaspoon Chinese five spice
  • 2 tablespoons red wine vinegar
Directions
  1. Place the carrots, onion, and celery into a slow cooker, then add the ham joint.
  2. Next add the bay leaf, peppercorns, and cinnamon stick.
  3. Pour in the cola, making sure the ham is submerged in the liquid.
  4. Cover and cook on low for 5 hours, until the meat is tender but still holds its shape.
  5. Preheat the oven to 300 F.
  6. Carefully drain the liquid from the slow cooker.
  7. Transfer the ham to a roasting pan or baking dish. Cut away any skin, exposing the fat on top.
  8. In a bowl, mix the honey, mustard, Chinese five spice, and red wine vinegar until combined.
  9. Using a brush, coat the ham joint with half of the glaze.
  10. Roast the ham in the oven for 10 minutes.
  11. Pour the remaining glaze over top and roast the ham for another 35 minutes.
  12. Remove the ham from the oven and let it rest.
  13. Cut the ham into thin slices and serve.
